Soft and sweet, this recipe pairs flavorful bread with warm cinnamon and nutmeg. Try using challah or bread with raisins that can be sliced thicker than standard sandwich bread.

If you are looking for ways to make this finger-food friendly, slice the bread into strips. Thick slices of bread help soak up the egg mixture and when cut into “fingers” keep their shape. Skip using syrup and sweeten your dish by sprinkling with cinnamon-sugar instead.

You can make your own cinnamon-sugar by combining 1/4 cup of granulated sugar with 1 tablespoon of ground cinnamon. Be sure to store in an airtight container.

For added calories, substitute half-and-half or whole milk for the low-fat milk.

Ingredients

  • 2 eggs

  • 1/2 cup low-fat milk

  • 2 tablespoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/8 teaspoon salt

  • 2 slices raisin, or other bread, cut into thirds if desired

  • 1 tablespoon butter

  • 1/3 teaspoon cinnamon-sugar

Directions

  1. In a bowl, beat the eggs. Add the milk, sugar, vanilla, cinnamon, nutmeg and salt. Stir well to combine.

  2. Add the bread and coat with egg mixture, turning pieces if necessary. Let the bread soak for 5 minutes or until much of the mixture has been absorbed.

  3. Using medium heat, melt the butter in a large skillet or griddle.

  4. Let the extra mixture drip off bread before cooking and place bread on the skillet. Cook for 3 to 4 minutes per side, or until golden.

  5. Remove to a place and sprinkle with cinnamon-sugar.
